Roasting coffee is all about extracting the best possible flavors from the green beans and tasting those flavors, fully developed, in the final brewed cup of coffee.

Cupping is an evaluation of green beans. The beans are under roasted and ground into a cup. Then the grounds are infused with water and first slurped and then spit out to experience all the flavors that exist in the beans. The best and worst flavors are present in this state. The key to a truly great cup of coffee is translating the promise of what exists in the green beans and then executing a roasting profile that maximize those flavors.

We cup to ensure the hard work done to bring the finest green beans from around the world into our shop is realized in the drinks enjoyed by our customers.

Create Your Own Coffee Blend

For those who want to do something unique and fun, we offer you an opportunity for 90 minutes of tasting, education, and blending of coffee. Working with a Coffee Educator, you will see what happens to the beans at different stages of roasting, taste the "characteristics and flavors" of different beans from around the world identifying which ones you enjoy, learn how to brew a perfect cup of coffee with a coffee press, and then create your own personal blend of coffee. At the end of your session you will go home with a bag of your custom blend, French coffee press, and the opportunity at any time in the future to reorder your very special blend. We need at least 3 days notice to make sure your Coffee Educator has the time to roast all the coffee beans used in your session. You can either do this in Napa or you can go to the St. Helena location and tour the equipment as part of your education.
